Iced bush tea May 26, 2012

Even in Norway, the summer tends to be quite hot, at least for a week or so. Although we do have our Mint And Lime Iced Tea handy, having more than one leg to stand on is a good thing. If you want to make an iced tea that cuts down on the time you spend making it, you want to base it on something that will not turn bitter or sour if left for too long with the leaves in the water.
 
My personal favorite for that, is Rooibos tea, also known as bush tea. It has a taste that I like a lot, and it is claimed to have medicinal properties, too.
 
Start off by making a large pot of bush tea. Leave it in the pot for two to four hours, before removing the leaves and transferring the tea to a bottle. Place the bottle in the fridge overnight, then pour into a generous pitcher with ice cubes and whatever citrus fruit you happen to have handy; lime is beautiful, but I imagine both orange, lemon and mandarines would work well, too.

 

Mint and Lime Iced Tea February 16, 2010

It’s been a very hot summer so far, and when it’s hot, drinking icy cold iced tea is a great way to cool down. Having experimented with variations over the theme of green iced tea, I decided to pick up a few things from my green-grocer’s to see if there wasn’t a better, simpler way of making iced tea. Here’s what I came up with:
 
You’ll need the following:

  • A bunch of fresh mint
  • Lime
  • Sugar
  • Water

 
That’s it. No, really, that’s it. Here’s how you make the iced tea: Chop the mint leaves coarsely. Slice half a lime, and quarter the slices. Toss the lime and mint into a pitcher. Boil some water, and dissolve the sugar in it. Pour the sugar water into the pitcher, and swirl it all around. Fill the pitcher with cold water, and put the pitcher in the fridge. Wait a few hours. Serve.
 
This recipe is quick to make, and simple. It tastes great and is a great thirst-quencher.

Lemon and honey tea

This is one of many simple ways to soothe a sore throat and dripping nose; and it is both healthy and very nice as well.

To make this you will need:

  • A large teacup
  • A lemon
  • Honey
  • Water

Start by boiling the water. While it comes to the boil, cut the lemon in half, and slice one of the halves. Add the slices to the cup along with a good dollop of honey. When the water is boiled, add it to the mix, and stir. Let it all draft for a couple of minutes before enjoying.

A variant on this theme is to add slices of ginger to the mix as well. This should also help that sore throat, and is also a very nice drink in and of itself.

 

Japanese-style green tea

At most sushi-places, they serve a very particular variation on the subject of green tea. It has a very nice and distinctive taste, and for our New Year’s dinner for 2009, I recreated it with some small success.
 
You will need;

  • Free leaf green tea
  • Sesame seeds

 
Simply put some tea leaves and sesame seeds in a tea pot, bring water to the boil and pour it over the leaves and sesame. Leave it to brew for a little while, and serve. You can leave them in the water, draining the pot if you wish.
 
The leaves and sesame seeds are good for two to three brewings with fresh water.
 
I recommend using high-grade green tea leaves. I have used Chaplon Long Jing Superior, which is a bit on the expensive side, but very nice.
